A sweet vegan mousse cake, perfect for early summer celebrations. This cake combines the sweetness of Baileys almond liqueur with a mousse-like texture.
Preparation Time: 30 minutes + 4 hours chilling time
Serving Size: 8 servings

Ingredients:

- 200 g vegan chocolate
- 400 ml chilled coconut cream
- 100 ml vegan Baileys almond liqueur
- 100 g sugar
- 1 tsp vanilla extract
- 1 tbsp agar-agar
- 2 tbsp water
- 200 g digestive biscuits (vegan)
- 100 g vegan butter (melted)

Instructions:

1. Crush the digestive biscuits in a bowl and mix with melted vegan butter.
2. Press the biscuit mixture firmly into the bottom of a springform pan and refrigerate to set.
3. Melt the chocolate using a double boiler or microwave.
4. Whip the coconut cream, sugar, Baileys, and vanilla extract in a bowl until fluffy.
5. Dissolve agar-agar in 2 tablespoons of water and heat in a saucepan until it dissolves.
6. Add the melted chocolate to the agar mixture and mix well.
7. Pour the chocolate-agar mixture into the coconut cream mixture and stir until smooth.
8. Pour the mousse over the biscuit base in the pan and smooth the top.
9. Allow to chill in the refrigerator for at least 4 hours, preferably overnight.
10. Serve chilled, optionally garnished with berries or chocolate shavings.
