Ingredients:

- 500 g potatoes
- 300 g carrots
- 200 g rutabaga
- 200 g beetroot
- 1 dl soy cream
- 2 tbsp vegan butter
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp syrup
- 1 dl vegetable broth powder
- 1 dl chopped parsley

Instructions:

1. Peel and chop the potatoes, carrots, rutabaga, and beetroot into evenly sized pieces.
2. Boil the vegetables in salted water for about 20-25 minutes, until they are tender.
3. Drain the cooked vegetables and transfer them to a bowl.
4. Add soy cream, vegan butter, black pepper, and syrup to the vegetables. Mash until smooth.
5. Stir in the vegetable broth powder and mix well.
6. Pour the mixture into a baking dish and smooth the top.
7. Bake at 180°C (350°F) for about 30 minutes or until the top is beautifully golden brown.
8. Garnish with chopped parsley before serving.
