White Chocolate Popcorn Cupcakes

Delicious white chocolate popcorn cupcakes featuring a moist blondie-like batter topped with sweet and salty popcorn. Perfect for parties or weekend afternoon tea!Preparation Time: 30 minutes
Serving Size: 12 cupcakes
Ingredients:
- 100 g butter- 150 g white chocolate
- 2 dl sugar
- 2 eggs
- 1 tsp vanilla extract
- 2 dl all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 100 g white chocolate popcorn
- Sprinkles for decoration
Instructions:
1. Preheat the oven to 175°C (350°F). Grease a muffin tin or use paper liners.2. Melt the butter and white chocolate in a saucepan over low heat. Stir until smooth and combined. Let it cool slightly.
3. In a mixing bowl, combine sugar, eggs, and vanilla extract with the melted butter and white chocolate mixture.
4. In another bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture and mix well.
5. Divide the batter evenly among the muffin cups, filling them about 2/3 full.
6. Bake in the oven for 12-15 minutes. The cupcakes are done when they are golden brown but still moist inside.
7. Remove the cupcakes from the oven and allow them to cool on a wire rack.
8. Once cooled, top each cupcake with white chocolate popcorn and sprinkle with decorations.
