White Chocolate Apricot Balls

Deliciously sweet bites that combine the sweetness of dried apricots with the luxury of white chocolate. Perfect as a sweet snack or dessert. Preparation Time: 30 minutes
Serving Size: 10-12 balls
Ingredients:
- 100 g dried apricots- 1 tsp lemon juice
- 1 tsp brown sugar
- 1 tsp lemon zest
- 1 1/4 dl heavy cream
- 125 g white chocolate
Instructions:
1. Chop the dried apricots into small pieces and place them in a bowl.2. Add lemon juice, brown sugar, and lemon zest to the apricots. Mix well.
3. Whip the cream in a bowl until soft peaks form.
4. Melt the white chocolate in a double boiler or microwave carefully. Allow it to cool slightly.
5. Fold the melted white chocolate into the whipped cream gently.
6. Add the apricot mixture to the whipped cream and mix until smooth.
7. Shape the mixture into small balls and place them on a baking sheet lined with parchment paper.
8. Refrigerate the balls for about 1-2 hours until firm before serving.
