Ingredients:

- 500 g fresh mushrooms (e.g., button mushrooms or chanterelles)
- 1 medium onion
- 2 garlic cloves
- 4 dl vegetable broth
- 2 dl heavy cream
- 2 tbsp butter
- Salt and pepper to taste
- Fresh parsley for garnish

Instructions:

1. Chop the onion and garlic finely.
2. Heat the butter in a pot over medium heat and sauté the onion and garlic until soft.
3. Add the chopped mushrooms and cook for about 5-7 minutes until the mushrooms shrink and gain color.
4. Pour the vegetable broth into the pot and let the soup simmer on low heat for about 10 minutes.
5. Blend the soup until smooth using an immersion blender or a regular blender.
6. Stir in the cream and mix well. Season with salt and pepper.
7. Heat the soup once more, but do not boil.
8. Serve warm, garnished with fresh parsley.
