A delightful raspberry tiramisu that combines soft mascarpone, sweet raspberries, and coffee flavors. Perfect for special occasions or as an everyday treat. Preparation Time: 30 minutes + chilling time
Serving Size: 6-8 servings
Ingredients
- 200 g frozen raspberries - 250 g mascarpone cheese
- 2 eggs
- 1 dl chilled strong coffee
- Sponge cake base (or 8-12 ladyfinger biscuits)
- 1 tbsp powdered sugar
- 2 tbsp cocoa powder for garnish
Instructions
1. Separate the egg whites from the yolks. 2. Whip the egg whites in a dry bowl until stiff peaks form.
3. In another bowl, whisk the powdered sugar and egg yolks until fluffy.
4. Gently fold the mascarpone into the egg yolk mixture until well combined.
5. Carefully fold the whipped egg whites into the mascarpone mixture.
6. Dip the sponge cake or ladyfingers into the coffee and layer them in a serving dish.
7. Add a layer of the mascarpone mixture and sprinkle raspberries on top.
8. Repeat the layers until all ingredients are used.
9. Cover the dessert with plastic wrap and chill in the refrigerator for at least 4 hours or overnight.
10. Dust with cocoa powder before serving.
