A moist and rich cake combining the creaminess of ricotta cheese with the freshness of berries. A perfect treat for your coffee table! Preparation Time: 1 hour + cooling
Serving Size: 8-10 pieces
Ingredients:
- 250 g ricotta cheese - 3 eggs
- 1 dl sugar
- 1 dl vanilla sugar
- 1 dl all-purpose flour
- 1 tsp baking powder
- 300 g frozen berries (e.g., raspberries)
- 1 dl milk
- 100 g melted butter
- Powdered sugar (for decoration)
Instructions:
1. Preheat the oven to 175°C (347°F). Grease and flour a cake pan. 2. In a bowl, mix ricotta cheese, eggs, sugar, and vanilla sugar until smooth.
3. Add all-purpose flour and baking powder, mixing well.
4. Pour in the milk and melted butter, stirring until all ingredients are well combined.
5. Gently fold in the frozen berries while they are still frozen.
6. Pour the batter into the prepared pan and smooth the top.
7. Bake in the oven for about 50-60 minutes, or until the cake is golden brown and cooked through (test with a toothpick).
8. Allow the cake to cool before serving. Dust with powdered sugar for decoration.
