Ingredients:
- 200 g beluga lentils - 250 g fresh raspberries
- 1 red onion
- 1 avocado
- 100 g feta cheese
- 50 g fresh basil
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions:
1. Cook the beluga lentils according to package instructions until tender but still firm. Drain and let cool.2. Finely chop the red onion and dice the avocado.
3. In a bowl, combine the cooled lentils, raspberries, red onion, avocado, and crumbled feta cheese.
4. Add the chopped basil to the salad.
