Ingredients:
- 300 g pasta (e.g., spaghetti or fusilli)
- 200 g fresh spinach
- 200 ml cooking cream
- 100 ml Parmesan cheese (grated)
- 2 garlic cloves (chopped)
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh basil (for garnish, if desired)
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve a bit of the cooking water.
2. Heat the olive oil in a large pan over medium heat. Add the chopped garlic and sauté for about a minute, until softened.
3. Add the fresh spinach to the pan and cook until completely wilted.
4. Pour in the cooking cream and mix well. Let the sauce simmer on low heat for about 5 minutes.
5. Stir in the grated Parmesan cheese until melted and well combined. Season with salt and pepper.
6. Add the cooked pasta to the sauce and mix thoroughly. If needed, add a bit of the reserved cooking water to prevent the pasta from being too dry.
7. Serve warm and garnish with fresh basil if desired.
