Ingredients:
- 300 g spaghetti - 150 g bacon or guanciale
- 2 large eggs
- 100 g grated Parmesan cheese
- 2 garlic cloves
- Salt
- Black pepper
- Fresh parsley (for garnish)
Instructions:
1. Cook the spaghetti in salted water until al dente, according to package instructions. 2. Heat a skillet over medium heat and fry the bacon or guanciale until crispy. Add crushed garlic cloves to the pan and sauté for one more minute.
3. In a bowl, whisk the eggs and mix in the grated Parmesan cheese. Season the mixture with salt and black pepper.
4. Once the pasta is cooked, drain it, reserving a bit of the cooking water. Add the pasta to the skillet with the bacon and garlic.
5. Remove the skillet from heat and pour the egg mixture over the pasta. Stir quickly so that the eggs cook just from the residual heat, adding reserved pasta water if needed to create a creamy consistency.
6. Serve immediately with fresh parsley, and add more Parmesan cheese if desired.
