A delicious and colorful salad combining beluga lentils and fresh vegetables. Perfect for lunch for four.

Serving Size: 4

Ingredients:

- 2 dl beluga lentils
- 6 dl water
- 1 tsp salt
- 1 broccoli (approximately 300 g)
- 1 red bell pepper
- 1 yellow bell pepper
Dressing:
- 2 1/2 tbsp olive oil
- 1 1/2 tbsp lemon juice
- 1-2 garlic cloves, minced
- 1 ml black pepper
- 3/4 tsp salt

Instructions:

1. Cook the beluga lentils in salted water until tender. Drain and let cool.
2. Steam the broccoli for a few minutes until slightly soft. Let cool and chop into small pieces.
3. Dice the red and yellow bell peppers.
4. In a large bowl, combine the lentils and vegetables.
5. Prepare the dressing by mixing all dressing ingredients together.
6. Pour the dressing over the salad and mix well.
7. Let the salad sit for a moment before serving.
