Serving Size: 4 servings
Ingredients:
- 300 g spaghetti
- 150 g bacon or guanciale
- 2 eggs
- 100 g Parmesan cheese (grated)
- 2 garlic cloves (minced)
- Salt to taste
- Black pepper to taste
- Fresh parsley (for garnish, optional)
Instructions:
1. Cook the spaghetti in salted water according to package instructions until al dente.
2. Meanwhile, heat a skillet over medium heat and add the bacon or guanciale. Cook until crispy.
3. Add the minced garlic to the skillet and cook for an additional minute.
4. In a bowl, crack the eggs and whisk lightly. Stir in the grated Parmesan cheese, salt, and black pepper.
5. Once the pasta is ready, drain it and reserve a little cooking water. Add the pasta to the skillet with the bacon and mix well.
6. Remove the skillet from heat and add the egg mixture to the pasta. Stir quickly to ensure the eggs cook lightly.
7. If the mixture is too dry, add a little reserved cooking water. Serve immediately and garnish with fresh parsley if desired.
