A fun and delicious twist on traditional tortillas, filled with vegan chicken, salsa, and sweet pineapple. Served with refreshing jalapeño yogurt. Preparation Time: 30 minutes

Ingredients
- 1 onion - 3 garlic cloves
- 2 tablespoons oil
- 1 pack vegan chicken (e.g., Muu Pulled Vegan Chicken Style or Like Meat “Like Chicken Bites”)
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- ¼ fresh pineapple (or canned pineapple)
- 4 tortilla wraps
- Salsa (optional)
- Jalapeño yogurt (dairy-free yogurt with jalapeños, omit jalapeños for kids)
Instructions
1. Peel and chop the onion and garlic cloves. 2. Heat oil in a skillet over medium heat and add the onion and garlic. Sauté until soft.
3. Add the vegan chicken to the skillet and season with smoked paprika, cumin, and oregano. Cook until the chicken is warm and slightly colored.
4. Chop the pineapple and add it to the skillet. Mix well.
5. Warm the tortilla wraps in the oven or on the skillet until heated through.
6. Fill the tortilla wraps with the vegan filling and fold them in half.
7. Place the filled tortillas in a baking dish and bake at 180°C (350°F) for about 10-15 minutes, until crispy.
8. Serve with salsa and jalapeño yogurt.
