Ingredients:
- 400 g spaghetti
- 150 g bacon or guanciale
- 2 eggs
- 100 g grated Parmesan cheese
- 2 garlic cloves
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Cook the spaghetti in salted water according to package instructions. Drain the pasta and reserve some of the cooking water.
2. Chop the bacon or guanciale into small pieces. Fry the bacon in a pan over medium heat until crispy. Add the crushed garlic to the pan and sauté for a moment.
3. In a bowl, mix the eggs and grated Parmesan cheese. Season with salt and black pepper to taste.
4. Combine the cooked spaghetti with the bacon and garlic in the pan. Remove the pan from heat.
5. Pour the egg mixture over the pasta and stir quickly to avoid cooking the eggs too much. Add a bit of reserved cooking water if needed to achieve a creamy sauce.
6. Serve immediately, garnished with fresh parsley if desired.
