This luxurious French soup combines the softness of peas with the sophistication of champagne, making it the perfect dish for New Year's Eve celebrations. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 400 g frozen peas
- 1 onion, chopped
- 2 garlic cloves, crushed
- 500 ml vegetable broth
- 200 ml cream
- 100 ml champagne
- Salt and black pepper to taste
- Fresh herbs (e.g., parsley or mint) for garnish
Instructions:
1. Heat a bit of oil in a pot and add the chopped onion. Sauté the onion over low heat until soft.
2. Add the crushed garlic and cook for another minute.
3. Add the frozen peas and vegetable broth. Cook the soup for about 10 minutes until the peas are soft.
4. Blend the soup with an immersion blender or in a regular blender until smooth.
5. Stir in the cream and champagne, mixing well. Reheat the soup gently, but do not bring it to a boil.
6. Season with salt and black pepper to taste.
7. Serve the soup warm and garnish with fresh herbs.
