Crème Ninon is a delicious and elegant alternative to traditional pea soup, perfect for serving at festive occasions or in a salon setting.

Ingredients:

- 500 g fresh peas
- 1 onion
- 1 potato
- 1 liter vegetable broth
- 200 ml cream
- 2 tablespoons butter
- Salt to taste
- Black pepper to taste
- Fresh mint for garnish

Instructions:

1. Peel and chop the onion and potato.
2. In a pot, melt the butter and sauté the onion for a few minutes until translucent.
3. Add the chopped potato and vegetable broth. Cook for about 10 minutes until the potato is tender.
4. Stir in the fresh peas and cook for another 5-7 minutes until the peas are cooked through.
5. Use an immersion blender to puree the soup until smooth.
6. Add the cream and season with salt and black pepper. Heat the soup again gently, being careful not to boil.
7. Serve the soup warm and garnish with fresh mint.
