A delightful pea soup with a sophisticated touch from champagne. Perfect for special occasions.

Ingredients:

- 500 g frozen peas
- 1 liter vegetable broth
- 1 onion
- 2 garlic cloves
- 100 ml champagne
- 100 ml cream
- 2 tablespoons butter
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish

Instructions:

1. Peel and finely chop the onion and garlic.
2. Heat the butter in a pot and add the chopped onion. Sauté until soft.
3. Add the frozen peas and vegetable broth to the pot. Bring to a boil and let it simmer for about 10 minutes.
4. Blend the soup with an immersion blender or in a regular blender until smooth.
5. Stir in the champagne and cream, mixing well. Heat gently, but do not boil.
6. Season with salt and black pepper to taste.
7. Serve the soup hot, garnished with fresh parsley. Enjoy with rye bread.
