Lobster Risotto

A creamy and luxurious risotto loaded with tender lobster meat and rich flavors. Perfect for a special occasion! Preparation Time: 1 hour 30 minutes
Serving Size: 4 servings
Ingredients:
- 1 large (800 g) cooked lobster
- 2 tbsp olive oil
- 1 lobster shell
- 1 large shallot, finely chopped
- 1 large carrot, diced
- 1 celery stalk, diced
- 3 tbsp tomato paste
- 2 tbsp Pernod (or similar anise liqueur)
- 2.5 dl dry white wine
- 1 white part of a leek, sliced
- 2 bay leaves
- 1 stalk lemongrass, crushed
- 3 sprigs dill
- 3 sprigs French tarragon
- 1 tsp black peppercorns
- 1 tsp white peppercorns
- 1.5 l water
- 1 tbsp oyster sauce
- 2 tbsp fish sauce
- 2 tbsp butter
- 350 g risotto rice (Arborio, Carnaroli, Vialone Nano)
- 2 dl grated Parmesan cheese
- Fine sea salt
- Cayenne pepper
- Fresh dill for garnish
- Fresh tarragon for garnish
Instructions:
1. De-shell the lobster: remove the shell and edible meat. Reserve larger pieces for finishing and refrigerate the meat.
2. Roast the lobster shells at 125°C (257°F) for 30 minutes in the oven. Crush the roasted shells and set aside.
3. In a pot, heat 2 tbsp olive oil, add the chopped shallot, carrot, and celery. Sauté for a moment.
4. Add the crushed lobster shells and tomato paste, mixing well. Pour in the Pernod and let it evaporate.
5. Add the white wine and let it reduce. Then add the leek, bay leaves, lemongrass, dill, tarragon, black and white peppercorns, and water. Simmer on low heat for about an hour.
6. Strain the resulting stock and add oyster sauce and fish sauce. Bring to a boil.
7. In a risotto pot, heat 2 tbsp olive oil and 1 tbsp butter. Add the chopped shallot and sauté.
8. Add the risotto rice and stir for a minute. Gradually add hot stock a couple of ladles at a time, stirring constantly.
9. When the rice is nearly cooked, add the lobster pieces and mix. Add the grated Parmesan cheese and season with salt and cayenne pepper.
10. Plate the risotto and finish with lobster pieces and fresh dill and tarragon leaves.
