Creamy Risotto

A delicious and creamy risotto that is perfect as a main dish or a side. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 1 cup Arborio rice - 4 cups vegetable or chicken broth
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1/2 cup white wine
- 3.5 tablespoons butter
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions:
1. Heat the broth in a saucepan and keep it warm. 2. In a large skillet, melt the butter and add the chopped onion. Sauté until soft.
3. Add the minced garlic and cook for another minute.
4. Stir in the Arborio rice and cook until the rice is slightly translucent.
5. Pour in the white wine and stir until it is mostly absorbed.
6. Gradually add the warm broth, one ladle at a time, stirring constantly until the liquid is absorbed before adding more.
7. Continue this process for about 18-20 minutes, until the rice is cooked but still al dente.
8. Remove the skillet from heat and mix in the grated Parmesan cheese.
9. Season with salt and pepper, and garnish with fresh herbs before serving.
10. Serve immediately and enjoy!
