Spiced Risotto with Sausages

A delicious risotto bursting with flavor and color, perfect for both everyday meals and special occasions. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 4 Kivikylä sausages
- 2 medium onions
- 1 fresh red chili
- 1 orange bell pepper
- 5 dl risotto rice
- 1 l vegetable broth
- 1 dl white wine
- 100 g Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and finely chop the onions. Dice the chili and bell pepper.
2. Heat olive oil in a large skillet. Add the onions and sauté for about 5 minutes until soft.
3. Add the chopped chili and bell pepper, and cook for a few more minutes.
4. Add the sausages and cook until they are nicely browned.
5. Stir in the risotto rice, ensuring it is well coated with the oil.
6. Pour in the white wine and let it evaporate almost completely.
7. Gradually add the vegetable broth one ladle at a time, stirring constantly. Add more liquid when the previous amount has been absorbed.
8. Continue this process until the rice is cooked but still slightly al dente, about 18-20 minutes.
9. Remove the pot from heat and stir in the grated Parmesan cheese. Season with salt and pepper.
10. Plate the risotto and garnish with fresh parsley before serving.
