A delicious risotto perfect for any season, customizable with seasonal ingredients. Preparation time is approximately 30 minutes. Serves 4.

Ingredients:

- 1 ½ cups Arborio rice
- 4 cups chicken or vegetable broth
- 1 small onion, finely chopped
- 2 garlic cloves, crushed
- 1 cup white wine (optional)
- 3.5 oz butter
- 3.5 oz Parmesan cheese, grated
- Salt and pepper to taste
- Fresh herbs (e.g., basil, parsley) for garnish

Instructions:

1. Heat the chicken or vegetable broth in a pot and keep it warm.
2. In another pot, melt the butter and add the chopped onion and crushed garlic. Sauté over low heat until the onions are soft.
3. Add the Arborio rice and stir until the rice is well coated with the butter.
4. Pour in the white wine and stir until it is almost completely evaporated.
5. Gradually add hot broth one ladle at a time, stirring constantly and waiting for the liquid to be absorbed before adding more.
6. Continue this process until the rice is al dente and the texture is creamy, about 18-20 minutes.
7. Remove the pot from heat, stir in the grated Parmesan cheese, and season with salt and pepper.
8. Serve immediately, garnished with fresh herbs.
