Andalusian Risotto

A sunny and flavorful risotto combining garlic and sherry. The perfect choice for a delicious dinner! Preparation Time: 30-40 minutes

Ingredients:
- 1.5 cups risotto rice - 1 onion, chopped
- 3 garlic cloves, minced
- 1 cup dry sherry
- 5 cups vegetable broth
- 2 tablespoons olive oil
- 1 cup grated Parmesan cheese
- 1/2 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions:
1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until soft. 2. Add risotto rice and stir well, cooking for about 1 minute.
3. Pour in the sherry and let it absorb into the rice.
4. Gradually add vegetable broth, about 1 cup at a time, stirring continuously. Add the next cup only after the previous one has been absorbed.
5. Continue cooking until the rice is al dente and the risotto is creamy.
6. Stir in Parmesan cheese and fresh parsley. Season with salt and pepper.
7. Serve immediately and enjoy the taste of Andalusia!
