A delicious and nutritious pea soup, perfect for cold days. This easy and quick recipe provides comfort and warmth. Preparation Time: 1 hour
Serving Size: 4-6 servings
Ingredients:
- 500 g dried peas
- 1.5 liters water
- 1 onion
- 2 carrots
- 1 celery stalk
- 2 bay leaves
- 1 tsp salt
- 1/2 tsp black pepper
- 200 g smoked beef or ham (optional)
- Fresh parsley (for garnish)
Instructions:
1. Rinse the peas in cold water and soak them overnight. If you're short on time, you can boil them for 1-2 hours before use.
2. Add the soaked peas to a large pot and pour in 1.5 liters of water. Bring to a boil.
3. Peel and chop the onion, carrots, and celery. Add them to the pot with the peas.
4. Add the bay leaves, salt, and black pepper. Simmer on low heat for about 45 minutes or until the peas are soft.
5. If desired, add pieces of smoked beef or ham to the soup. Cook for an additional 10-15 minutes.
6. Remove the bay leaves before serving. Serve the hot soup garnished with fresh parsley.
