A comforting Finnish pea soup perfect for chilly days. Serves 4.
Preparation Time: 10 minutes (plus soaking overnight)
Cooking Time: 1.5 hours
Ingredients:
- 500 g dried peas
- 1.5 liters water
- 1 onion
- 2 carrots
- 1 bay leaf
- 1 tsp salt
- 1/2 tsp black pepper
- 200 g smoked ham or meat (optional)
- Fresh parsley (for garnish)
Instructions:
1. Rinse the peas in cold water and soak them overnight.
2. Drain the peas and place them in a pot with the water.
3. Peel and chop the onion and carrots. Add them to the pot with the peas.
4. Add the bay leaf, salt, and black pepper.
5. Cook the soup over low heat for about 1.5 hours or until the peas are tender.
6. If using smoked ham, add it to the soup about 30 minutes before it’s done.
7. Remove the bay leaf before serving and puree the soup if desired.
8. Serve garnished with fresh parsley.
