A classic Finnish pea soup that's rich in flavor and nutrients, with options for both meat lovers and vegetarians.

Serving Size: 4-6 servings

Ingredients:

- 400 g split peas
- 1 liter water
- 1-2 carrots
- 1 onion
- 2 potatoes
- 2 tablespoons mustard
- 1 dl fresh parsley
- Salt and black pepper to taste
- (Optional) 200 g smoked meat or ham

Instructions:

1. Rinse the split peas and soak them in water for at least 2 hours or overnight.
2. Peel and chop the carrots, onion, and potatoes.
3. Boil the soaked peas in water for about 10-15 minutes.
4. Add the chopped vegetables to the soup and cook for an additional 15-20 minutes, until the peas and vegetables are tender.
5. If using smoked meat, add it to the soup at this stage and simmer for a few more minutes.
6. Season the soup with mustard, salt, and pepper.
7. Serve the soup garnished with fresh parsley.
