Sea Buckthorn Curd (Tyrnitahna)

A tangy and sweet spread perfect for pastries or as a topping. This vibrant yellow curd is ideal for your spring table. Preparation Time: 30 minutes
Serving Size: About 400 ml
Ingredients:
- 300 g sea buckthorn berries - 250 g powdered sugar
- 3 eggs
- 75 g butter
Instructions:
1. Allow the sea buckthorn berries to thaw if frozen. 2. Pass the berries through a fine sieve to puree them.
3. In a saucepan or bowl, measure the powdered sugar and whisk in the eggs until well combined.
4. Stir the pureed sea buckthorn into the mixture.
5. Heat the mixture over a double boiler, stirring constantly with a whisk until it thickens.
6. Remove the saucepan or bowl from the double boiler and whisk in the softened butter in small pieces until fully incorporated.
7. Pour the curd into a clean glass jar and store it in the refrigerator.
