Ingredients:

- 4 slices whole grain bread
- 1 avocado
- 1 tomato
- Salad leaves (e.g., arugula or lettuce)
- 2 tbsp mayonnaise or vegan mayonnaise
- Salt and pepper to taste

Instructions:

1. Cook the veggie patties in a skillet according to package instructions until golden brown on both sides.
2. Meanwhile, slice the avocado and tomato.
3. Spread mayonnaise on each slice of bread.
4. Place the patties on the bread, then add avocado slices, tomato slices, and salad leaves.
5. Season with salt and pepper.
6. Top with another slice of bread and cut the sandwich in half.
