Ingredients:
- 1 medium zucchini
- 1 ripe banana
- 2 cups gluten-free rolled oats
- 3 cups plant-based milk (e.g. almond or oat milk)
- A pinch of salt
- Berries (e.g. red currants, strawberries)
- Fruits (e.g. nectarine)
- Pollen granules (optional)
- Nettle seeds (optional)
- Maple syrup (optional)
Instructions:
1. Grate the zucchini into coarse shreds.
2. In a bowl or blender, puree the zucchini, banana, gluten-free rolled oats, plant-based milk, and salt until smooth.
3. Let the mixture chill in the refrigerator for at least 30 minutes or overnight.
4. Serve the oats topped with berries and fruits.
5. Optionally, add pollen granules and nettle seeds. Sweeten with maple syrup if desired.
