A delicious and refreshing pesto pasta salad, perfect as a side dish or a light main course. Preparation time is about 30 minutes, serving size is 4.
Ingredients:
- 250 g cooked pasta (e.g., green penne or farfalle)
- 4 tbsp pesto
- 2 red bell peppers
- 1 large yellow zucchini
- 2 tbsp roasted pine nuts
- Fresh basil leaves for garnish
Pesto:
- 2 cups fresh basil leaves
- 75 g Parmesan cheese
- 2 tbsp pine nuts
- 3 garlic cloves
- 150 ml olive oil
- Salt, black pepper, and a pinch of sugar
Instructions:
1. Prepare the pesto: Remove the basil leaves from the stems and place them in a blender. Add Parmesan cheese, pine nuts, garlic, olive oil, salt, black pepper, and a pinch of sugar. Blend until smooth.
2. Cook the pasta according to the package instructions, drain, and let it cool.
3. Cut the bell peppers and zucchini into small cubes.
4. In a large bowl, combine the cooled pasta, pesto, bell peppers, and zucchini.
5. Add the roasted pine nuts and mix well.
6. Garnish with basil leaves before serving.
