Ingredients:
- 200 g pasta (e.g., spaghetti or fettuccine)
- 100 g bacon or pancetta
- 2 eggs
- 50 g Parmesan cheese (grated)
- 2 garlic cloves (minced)
- Salt to taste
- Black pepper to taste
- Fresh parsley (for garnish)
Instructions:
1. Cook the pasta in salted boiling water according to package instructions. Drain and reserve a little cooking water.
2. In a pan over medium heat, cook the bacon or pancetta until crispy. Add the minced garlic and sauté for another minute.
3. In a bowl, crack the eggs and whisk them lightly. Stir in the grated Parmesan cheese until well combined.
4. Add the cooked pasta to the pan with the bacon and garlic. Remove the pan from heat.
5. Pour the egg mixture over the pasta and quickly toss to combine, allowing the heat of the pasta to cook the eggs without scrambling them. If needed, add some reserved pasta water to achieve a creamy consistency.
6. Season with salt and black pepper. Serve immediately, garnished with fresh parsley.
