Ingredients:
- 200 g butter- 250 g sugar
- 4 eggs
- 300 g all-purpose flour
- 50 g cocoa powder
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 200 ml coffee (brewed and cooled)
- 100 g mint chocolate (chopped)
- 1 tsp mint extract
Instructions:
1. Preheat the oven to 175°C (350°F). Grease and flour a cake pan.2. Melt the butter in a saucepan and add the sugar. Stir well until the sugar has completely dissolved.
3. Add the eggs one at a time, mixing well after each addition.
4. In a separate bowl, combine the flour, cocoa powder, baking powder, baking soda, and salt.
5. Gradually add the dry ingredients to the butter mixture, alternating with the coffee, and mix until smooth.
6. Fold in the chopped mint chocolate and mint extract into the batter. Mix well.
7. Pour the batter into the prepared cake pan and smooth the top.
8. Bake in the oven for about 45-50 minutes or until the cake is cooked through (test with a toothpick).
9. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
