This delicious pasta dish will transport you straight to the sun-soaked hills of Tuscany. Perfect for sharing with friends! Preparation Time: 30 minutes

Ingredients:
- 300 g pasta (e.g. tagliatelle or penne) - 2 tablespoons olive oil
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 200 g cherry tomatoes, halved
- 100 g spinach (fresh or frozen)
- 100 g Parmesan cheese, grated
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain and reserve a bit of the cooking water. 2. Heat the olive oil in a large skillet over medium heat. Add the crushed garlic and sauté for about one minute.
3. Add the diced bell pepper and cook until softened, about 5 minutes.
4. Stir in the cherry tomatoes and spinach. Cook until the tomatoes start to soften and the spinach wilts.
5. Mix the cooked pasta into the skillet and add a little reserved cooking water if needed to prevent the pasta from being dry.
6. Season with salt and pepper. Stir in the grated Parmesan cheese and mix well.
7. Serve warm, garnished with fresh basil.
