A refreshing and colorful pasta salad perfect for warm days or gatherings.
Preparation Time: 15 minutes
Serving Size: 4 servings
Ingredients:
- 250 g pasta (e.g. penne or fusilli)
- 1 cup cherry tomatoes
- 1 cucumber
- 1 red onion
- 1 bell pepper (e.g. red or yellow)
- 150 g feta cheese
- 1/2 cup olives (e.g. black or green)
- 1/4 cup fresh basil
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions:
1. Cook the pasta according to package instructions and drain. Let it cool.
2. Halve the cherry tomatoes, dice the cucumber, slice the red onion thinly, and cut the bell pepper into strips.
3. In a large bowl, combine the cooled pasta, tomatoes, cucumber, red onion, bell pepper, feta cheese, and olives.
4. Add the chopped basil, olive oil, balsamic vinegar, salt, and pepper. Mix well.
5. Cover the bowl and refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld.
6. Serve chilled and enjoy!
