A delicious and nutritious option for lunch or dinner, these tuna quinoa patties are quick to prepare and packed with flavor. Preparation time: 30 minutes
Serving size: 4 servings
Ingredients:
- 1 can (about 200 g) MSC-certified tuna (John West)- 1 cup quinoa
- 2 cups water
- 1 small onion, finely chopped
- 2 garlic cloves, crushed
- 1 egg
- 1 cup breadcrumbs
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 2 tbsp fresh parsley, chopped
- Oil for frying
Instructions:
1. Cook the quinoa in water according to package instructions until tender. Allow it to cool.2. Drain the tuna and mix it in a bowl with the onion, garlic, egg, breadcrumbs, salt, black pepper, paprika, and parsley.
3. Add the cooled quinoa to the mixture and stir well.
4. Shape the mixture into round patties.
5. Heat oil in a frying pan over medium heat and fry the patties for about 3-4 minutes on each side or until golden brown.
6. Serve warm with a side salad or yogurt sauce.
