A delicious and juicy dish featuring pork loin served with a creamy tuna sauce. Perfect for festive occasions! Preparation Time: Approximately 2 hours
Serving Size: 6 servings
Ingredients:
- 1 can tuna in oil - 1 tsp whole allspice
- Lemon slices
- 1 carrot (for thinning the meat broth, if necessary)
- Capers
- 1 egg
- 1 onion
- A piece of celery root
- About 1.5 kg pork loin
- 2 bay leaves
- 2 tbsp coarse salt
- 100 ml olive oil
- 2-3 tbsp lemon juice
- 4 anchovy fillets
- A pinch of salt
- A pinch of ground black pepper
Instructions:
1. Remove the membranes from the pork loin and cut it into manageable pieces. 2. Boil the pork pieces in a pot with water, bay leaves, salt, onion, celery root, and carrot. Cook for about 1.5 hours until the meat is tender.
3. Remove the meat from the pot and let it cool. Reserve the broth.
4. Prepare the tuna sauce: blend the tuna, egg, olive oil, lemon juice, anchovy fillets, allspice, capers, a pinch of salt, and black pepper in a blender until smooth.
5. Slice the cooled pork and arrange the slices on a platter.
6. Pour the tuna sauce over the meat and garnish with lemon slices.
