Ingredients:
- 300 g pasta (e.g., spaghetti or fettuccine)
- 150 g bacon or pancetta
- 2 eggs
- 100 ml heavy cream
- 50 g Parmesan cheese (grated)
- Salt
- Black pepper
- Fresh parsley (optional)
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente.
2. Meanwhile, cook the bacon or pancetta in a frying pan over medium heat until crispy. Remove from heat and let it cool slightly.
3. Crack the eggs into a bowl and whisk them lightly. Add the cream and grated Parmesan cheese to the bowl, seasoning with salt and black pepper.
4. Once the pasta is cooked, drain it, reserving a bit of the cooking water.
5. Add the hot pasta to the pan with the bacon and mix well.
6. Pour the egg mixture over the pasta and stir quickly to ensure the eggs cook gently from the heat of the pasta. If the sauce seems too thick, add a little reserved cooking water.
7. Serve immediately, garnished with fresh parsley if desired.
