These delicious toffee-filled chocolate cookies are the perfect sweet snack or dessert. The cookies are moist and contain a surprise as the toffee filling melts in your mouth.
Preparation Time: 1 hour + cooling time
Serving Size: 24 cookies
Ingredients:
- 115 g butter
- 1 dl brown sugar
- 1 dl granulated sugar
- 1 tsp vanilla extract (optional)
- 1 egg
- 3 dl all-purpose flour
- 40 g cocoa powder (about 1/3 dl)
- 1/2 tsp baking soda
- 20-24 pieces of chocolate candies (like Center chocolate)
Instructions:
1. Cream the softened butter with the brown sugar and granulated sugar until light and fluffy, about a few minutes.
2. Add the vanilla extract (if using) and egg, and mix well.
3. In a separate bowl, sift together the flour, cocoa powder, and baking soda. Gradually mix the dry ingredients into the butter-sugar mixture until smooth, then cover and refrigerate for about an hour.
4. Preheat the oven to 190°C (375°F).
5. Take about a tablespoon of dough in your hand, press one chocolate candy into the center, and roll it into a ball, ensuring the candy is fully enclosed. Optionally, roll the balls in sugar.
6. Place the dough balls a few centimeters apart on a baking sheet lined with parchment paper and bake for about 8 minutes.
7. Allow to cool on a wire rack.
