Serving Size: 4 servings
Ingredients:
- 2 tablespoons olive oil - 1 onion, chopped
- 2 garlic cloves, crushed
- 2 carrots, diced
- 2 celery stalks, sliced
- 1 potato, diced
- 1 zucchini, diced
- 1 liter vegetable broth or water
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 200 grams frozen peas
- Fresh parsley for garnish
Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté for about 5 minutes until softened. 2. Add the crushed garlic, carrots, and celery. Cook for a few more minutes.
3. Stir in the potato, zucchini, vegetable broth, thyme, salt, and pepper. Bring to a boil, then reduce the heat. Let the soup simmer for about 15 minutes until the vegetables are tender.
4. Add the frozen peas and cook for another 5 minutes. Taste and adjust seasoning if necessary.
5. Serve hot, garnished with fresh parsley.
