A classic Italian dish that comes together quickly and easily, combining pasta, bacon, and a creamy sauce for the perfect weeknight dinner. Preparation Time: 20 minutes
Serving Size: 4 people
Ingredients:
- 300 g spaghetti
- 150 g bacon or guanciale
- 2 eggs
- 100 g grated Parmesan cheese
- 2 cloves garlic
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Cook the spaghetti in salted water according to the package instructions until al dente.
2. Cut the bacon into small pieces and fry them in a pan over medium heat until crispy. Add the garlic to the pan and sauté for an additional minute.
3. In a bowl, whisk together the eggs and grated Parmesan cheese. Add salt and black pepper to taste.
4. Once the pasta is cooked, drain it, reserving a bit of the cooking water. Add the pasta to the pan with the bacon and garlic.
5. Remove the pan from heat and pour the egg mixture over the pasta. Quickly toss to combine, allowing the eggs to lightly cook and create a creamy sauce. If needed, add a bit of the reserved pasta water to achieve a smooth sauce.
6. Serve immediately, garnished with fresh parsley if desired.
