A quick and easy pasta dish perfect for a weeknight dinner. Fresh tomatoes and mozzarella bring flavor and color to the plate. Preparation time is just 30 minutes and the recipe serves four.
Ingredients:
- 300 g pasta (e.g. fusilli or spaghetti)
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 400 g cherry tomatoes, halved
- 200 g fresh mozzarella cheese, diced
- 1/2 cup fresh basil, chopped
- Salt and pepper to taste
- Grated Parmesan cheese for serving (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve a little cooking water.
2. Heat olive oil in a large pan over medium heat. Add minced garlic and sauté for about 1 minute.
3. Add cherry tomatoes to the pan and cook for about 5-7 minutes, until the tomatoes soften.
4. Toss the cooked pasta with the tomato mixture. If needed, add a little reserved cooking water to moisten the mixture.
5. Stir in the mozzarella cheese and chopped basil. Season with salt and pepper. Gently mix until the cheese begins to melt.
6. Serve immediately, and sprinkle with grated Parmesan cheese if desired.
