Ingredients:
- 200 g pasta (e.g., spaghetti) - 100 g bacon or pancetta
- 2 eggs
- 50 g Parmesan cheese (grated)
- Salt to taste
- Black pepper to taste
- Fresh parsley (optional)
Instructions:
1. Cook the pasta in salted water according to the package instructions. Drain the pasta and reserve a little of the cooking water. 2. In a skillet, cook the bacon or pancetta over medium heat until crispy.
3. In a bowl, whisk together the eggs and grated Parmesan cheese. Add black pepper and mix well.
4. Combine the hot pasta with the bacon in the skillet. Remove the pan from heat.
5. Quickly add the egg mixture to the pasta and stir to combine, allowing the heat from the pasta to cook the eggs without scrambling them.
6. If needed, add a bit of reserved cooking water to achieve a creamier consistency.
7. Garnish with fresh parsley and serve immediately.
