Ingredients:
- 200 g pasta (e.g., spaghetti or penne)
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 100 g cherry tomatoes, halved
- 100 g spinach
- 50 g Parmesan cheese, grated
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water until al dente. Drain and reserve a little pasta cooking water.
2. Heat olive oil in a pan over medium heat. Add minced garlic and sauté for about one minute.
3. Add the halved cherry tomatoes to the pan and cook for about 3-4 minutes until they soften.
4. Stir in the spinach and cook until wilted.
5. Add the cooked pasta to the pan and mix in a little pasta cooking water if needed. Season with salt and pepper.
6. Remove the pan from heat and stir in the grated Parmesan cheese. Mix well.
7. Serve immediately and garnish with fresh basil if desired.
