A simple and tasty pasta dish that combines fresh tomatoes and mozzarella cheese, perfect for a weeknight dinner! Preparation Time: 30 minutes

Ingredients:
- 300 g pasta (e.g. penne or fusilli) - 250 g cherry tomatoes
- 200 g mozzarella cheese
- 3 tbsp olive oil
- 2 garlic cloves
- Salt, to taste
- Black pepper, to taste
- Fresh basil, for garnish
- Grated Parmesan cheese (optional)
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain, reserving a little pasta water. 2. Halve the cherry tomatoes and cube the mozzarella cheese.
3. Heat olive oil in a large pan over medium heat. Add the crushed garlic cloves and sauté for about one minute until golden brown.
4. Add the cherry tomatoes to the pan and cook for about 5 minutes until they start to soften.
5. Add the cooked pasta to the pan and mix well. If needed, add a little reserved pasta water to prevent the pasta from drying out.
6. Stir in the mozzarella cheese cubes and season with salt and black pepper.
7. Serve the dish topped with fresh basil and grated Parmesan cheese, if desired.
