Rice Paper Rolls with Shrimp and Vegetables

A delicious and refreshing light meal or snack combining fresh vegetables and flavorful shrimp. Preparation Time: 30 minutes
Serving Size: 4 rolls
Ingredients:
- 4 rice paper wrappers
- 200 g cooked and peeled shrimp
- 1 avocado (sliced)
- 1 carrot (julienned)
- 1 cucumber (julienned)
- 1 red bell pepper (julienned)
- 1/2 cup fresh cilantro
- 1/2 cup fresh mint
- Soy sauce for serving
Instructions:
1. Prepare all the vegetables and herbs by slicing and julienning them into small pieces.
2. Dip the rice paper wrapper in warm water for about 10 seconds until it softens. Carefully lift it out.
3. Place a layer of shrimp and vegetables in the center of the rice paper. Add cilantro and mint for extra flavor.
4. Fold the edges of the rice paper over the filling and roll tightly to form a roll.
5. Repeat the process with the remaining rice paper wrappers.
6. Serve the rice paper rolls with soy sauce on the side.
