This delicious olive-caper spread is a perfect accompaniment to toasted bread. Its flavor is intense and fresh, making it an excellent appetizer or snack. Preparation Time: 15 minutes

Ingredients:
- 100 g black olives, pitted - 2 tbsp capers
- 1 garlic clove
- 10 basil leaves
- 2 tbsp anchovy paste
- 1 tbsp lemon juice
- Cracked black pepper, to taste
- 4 tbsp olive oil
Instructions:
1. In a mortar and pestle or using an immersion blender, crush the olives, capers, garlic, and basil leaves into a coarse paste. 2. Season the paste with anchovy paste, lemon juice, and cracked black pepper.
3. Gradually drizzle in the olive oil while stirring until the mixture is smooth.
4. Serve the spread with toasted rustic bread.
The spread will keep in the refrigerator for over a week.
