Serving Size: 4-6 servings
Ingredients:
- 300 g MSC-certified shrimp
- 200 g MSC-certified herring
- 2 tablespoons olive oil
- 1 clove garlic, crushed
- 1 lemon (juiced and zested)
- 100 g fresh dill, chopped
- Salt and pepper to taste
- 100 g fresh salad greens (e.g., arugula or iceberg lettuce)
Instructions:
1. Rinse the shrimp in cold water and drain well.
2. Heat olive oil in a pan over medium heat. Add the crushed garlic and sauté for about a minute.
3. Add the shrimp to the pan and cook until they are pink, about 3-4 minutes.
4. Squeeze the lemon juice and add the zest to the shrimp, seasoning with salt and pepper.
5. Remove from heat and stir in the chopped dill.
6. Slice the herring. Serve the herring slices and shrimp on top of fresh salad leaves.
7. Garnish the plates with extra dill and lemon slices.
