Ingredients:
- 500 g red-skinned potatoes
- 2 medium onions
- 1 lemon
- Cayenne pepper or chili
- 1 tbsp seasoning blend (e.g., Old Bay)
- 250 g smoked sausage
- 2 ears of corn (pre-cooked)
- 500 g jumbo shrimp (with tails)
- Lemon wedges, salt or seasoning blend for serving
- Beer for serving
Instructions:
1. Get the largest pot you have.
2. Rinse the potatoes thoroughly and cut them into large chunks. Small potatoes can be left whole or halved.
3. Add the potatoes, quartered lemon, and chopped onions to the pot.
4. Add the spices and enough water to cover the ingredients, then bring to a boil. Let it boil for about 10 minutes.
5. Add the chopped sausage and boil for an additional 3 minutes.
6. Add the corn and cook for another 3 minutes.
7. Check the doneness of the potatoes. Add the shrimp and boil for an additional 3 minutes, but do not overcook.
8. Drain the cooking water and transfer the ingredients to a large serving platter.
9. Serve with salt, seasoning blend, and beer. Everyone can scoop their portions directly from the serving platter.
