A delicious herbed omelette that makes a perfect addition to a sandwich or on its own. Easy to prepare and packed with flavor!

Ingredients:

- 2 eggs
- ½ cup water
- 1 tablespoon oil for frying
- A handful of chopped parsley
- A handful of chopped chives
- ½ green chili (seeds can be removed)
- Salt
- Black pepper
- (Paprika or other spices, optional)

Instructions:

1. Whisk the eggs and water together in a bowl.
2. Add the chopped parsley, chives, and green chili to the mixture. Season with salt, black pepper, and any additional spices if desired.
3. Heat the oil in a frying pan. The pan should be large enough to make the omelette flat and thin.
4. Pour the egg mixture into the hot oil. Allow the bottom to cook on high heat until it is browned.
5. Cover the pan with a lid for a few minutes to help the top set more quickly.
6. Once the bottom is brown and the top is set, carefully flip the omelette and cook the other side for a few minutes until it is also browned and crispy.
7. Serve the omelette between slices of bread or in a sandwich. Spread cream cheese or soft cheese on the bread, add a piece of herbed omelette, a lettuce leaf, tomato slices, and pickles.
