Delicious pastrami egg muffins are the perfect choice for breakfast, brunch, or a snack. They are easy to make and taste great both warm and cold! Preparation Time: 35 minutes
Serving Size: 12 muffins
Ingredients
- 8 eggs - 1.2 dl milk, cream, or water
- 2 dl shredded cheese
- 170 g pastrami or other cooked meat, cut into small pieces
- 1 dl green onions, finely chopped (about 1)
- Salt to taste
- Black pepper to taste (if needed)
Instructions
1. Crack the eggs into a bowl and whisk them lightly until well mixed. 2. Stir in the milk, cheese, pastrami, and green onions. Season with salt and black pepper as desired.
3. Divide the egg mixture evenly among 12 greased silicone muffin cups or double-lined paper muffin cups.
4. Bake the egg muffins at 200°C (392°F) for 20–25 minutes, until they are golden brown and cooked through.
Enjoy the muffins on their own or with a fresh salad!
