Ingredients:
- 3 eggs - 3 tablespoons grated Parmesan cheese
- 3 tablespoons grated cheddar, Emmental, or Gruyère cheese
- 1 tablespoon chopped chives
- Salt and black pepper to taste
For Garnish:
- 1 tablespoon grated Parmesan cheese
- 1 teaspoon chopped chives
Instructions:
1. Preheat the oven to 175°C (350°F). 2. Prepare all ingredients. Allow the eggs to come to room temperature.
3. Melt a small amount of butter in an oven-safe skillet.
4. Separate the egg whites into a larger bowl and the yolks into a smaller bowl.
5. Whisk the egg whites until stiff peaks form.
6. Break the yolks and gently pour them over the beaten whites. Add half of the cheese, chives, salt, and pepper.
7. Carefully fold everything together without overmixing.
8. Check that the butter has melted and is hot in the skillet. Pour the egg mixture into the skillet and spread it lightly.
9. Cook on the stovetop for 1 minute. Sprinkle the remaining cheese on top.
10. Transfer the skillet to the oven and bake for 3–4 minutes.
11. Remove the omelette from the oven and slide it onto a plate. Fold it in half and sprinkle the top with Parmesan and chives.
